Grain-free Green Bean Casserole by Wellness Mama!

 

This recipe is AMAZING! There were people last year walking away with plates of just this. By comparison to the normal "Frankenfood" canned/jarred green bean casserole, it takes a while to make, so prepping ahead of time is helpful, but it is SO worth it!

My Mom always added sherry to her stuff. Gives it a good flavor

 

 

Holiday Stuffing

1 Stalk Celery, chopped
1 Onion, chopped
1/2 Cup Mushrooms, chopped
1 (8OZ) Can Chestnuts,
drained & sliced
3 Tablespoons Parsley,minced
1 Teaspoon Sage
1 Cup Cooking Sherry
1 (8OZ) Package Herb
Stuffing Mix


Preheat Oven to 350°. Mix all ingredients in a bowl until blended. Transfer to a baking dish. Bake for 20 minutes.

All recipes look delicious!  I'll share a cake I love and would be a nice dessert in case you're interested, it only takes about half an hour to have it done 😉

Apple Spice Cake with Cream Cheese Icing

Ingredients

1/2 stick butter, plus extra for loaf pan
3 Granny Smith apples, peeled and cored, cut into 1/2-inch dice and tossed with a little lemon juice
1/2 lemon, juiced
1 cup apple cider
1 3/4 cups all-purpose flour, plus extra for loaf pan
1 teaspoon ground cinnamon
1 teaspoon baking soda
3 or 4 grates fresh nutmeg (about 1/2 teaspoon)
3/4 cup brown sugar
3/4 cup sugar
Pinch kosher salt
1 egg
1 teaspoon vanilla extract
1/2 cup toasted and chopped walnuts
1/2 cup golden raisins

 

Cream Cheese Icing:
1 (8-ounce) package cream cheese, at room temperature
1 stick butter, at room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 lemon, juiced

 

Directions

Preheat the oven to 350 degrees F.

Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.

In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.

Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.

Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.

Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
Cream Cheese Icing:

Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

Here goes my recipe for Thanksgiving, Carrot Souffle:

 

1 pound carrots, coarsely chopped

1 teaspoon vanilla extract

3 eggs

3 tablespoons all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup white sugar

 

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
  2. Bring a large pot of salted water to a boil. Add carrots and cook until tender, 15 to 20 minutes. Drain and mash. Stir in margarine, vanilla extract and eggs; mix well. Sift together flour, baking powder, salt and sugar; stir into carrot mixture and blend until smooth. Transfer to prepared casserole dish.
  3. Bake for 45 minutes.

It's delicious and it's a great way to combine flavors from all of your dishes for that day. Enjoy! Robot wink

This! I love cranberry sauce! Sometimes I make it mid year just to eat with turkey breast or chicken. 

I also love all things ginger so when I found this I tried it right away.

My annual contribution to the Thanksgiving meal is not actually my recipe but Paula Dean's ... green bean caserole (Google it).  OK, I know her cooking may not be heart-healthy or fitbit-friendly, but hey, its only once a year, and today I'm not keeping track of calories, anyway, lol.  The trick is to triple (or quadruple) the amount of the green beans and double the onions and mushrooms.  Add some chicken broth before baking to keep it from drying out.  Save some of the onion crunchies to add on the top and add the cheese on top of that.  YUMMMy
