I hope everyone who celebrated Thanksgiving this week had a great holiday. If you're like me, your refrigerator is now full of leftovers. What is your favorite thing to do with Thanksgiving leftovers?
 
I cooked down the turkey carcass yesterday to make stock and recover a much meat as I could. Now I have a big pot of turkey soup simmering on the stove. It smells so good!

I have an 18 year old son, leftovers are not a problem. He cleaned out the fridge in 3 days this year. For me, my favorite thing to do the day after Thanksgiving is to take the leftover salad, veggies, a bit of turkey and a little cranberry sauce, add fresh veg to it with fresh squeezed lemon and hot sauce and shake it to mix. It is fantastic!
