Vegetarian Help?

I'm a vegetarian and get pretty bored with the same old same old. I was just wondering if anyone had recipes to switch things up for me!

Roasted veggies..... cauliflower, carrots, brussel sprouts.....sweet potato....peppers.... pretty much any veggie thats lightly sprinkled with good oil and put in the oven for a while is my favorite.

Check out Happy Herivore (.com?) her cookbooks are aweome, especially the new one HH light and Lean. Super fast, super accessible (like normal pantry stuff) and very yummy! AND the book it like 11.00 or something. Sounds like I know her but I dont:) I just absolutly love the simplicity of ingredients and time saver all of her recipes are. I am new to fitbit - like 3 days now:) - but I love community on a Herbie Parent facebook page and so I made a Herbie Fitbit community here too. ... on her website she shares so many awesome tips and recipes for free too. E2 diet is another one i love for simplicity and flavor. I have several other books but rarely use them.

Has anyone tried the Happy Herbivore meal plans? They sound tempting, but, alas, I don't cook. My husband does any cooking that gets done, and we eat out practically every day. It would probably just be wishful thinking to expect the meal plans to be easy enough for me.

I did buy a week awhile back. I don't use them only because my husband is very picky and it is very difficult yo get him to try new things. I found I was cooking for me and separately for him. There are a lot of other herbies that do use them and love the simplicity. She has a closed facebook group, herbie lifestyle if you want to check it out.

I think a lot of Asian dishes can be easily made vegan/ vegetarian. I love:

 

-stir fry with black bean sauce (love eggplant, baby corn, waterchestnuts, bean sprouts, grilled smoked tofu)

-I used to eat the Tofurky hot dogs; those are really tasty

-rice pasta with vegetarian cheese sauce (add some cooked cauliflower to make it healthier!) I love hot sauce too, like Sriracha and also Louisiana hot sauce

-vegetarian tacos

-vegetarian ''7 layer'' bean dip (I use Daiya meltable dairy-free cheese :))

-pizza salads! I get daiya cheese, tomato sauce (ragu), green and black olives, mushrooms, pineapple etc - anything you'd find on a pizza (you can even get mock pepporoni) and you basically make a salad that tastes like a pizza! Some people even heat up the mock-meat and the cheese

-peanut butter and jam wraps (not sammies) with the peanut butter, jam, and bananas added to a wrap

-salad rolls are easy to make! Stuff them with bean sprouts, rice noodles, strips of tofu or tempeh and get a peanut satay sauce. If you live near a China Town, you can get a whole bunch of rice wraps for probably $2 to $3 and the peanut satay sauces are less there, usually, too!

-get east indian spices/ currays and you can make your own chole bhature, rajma, dal makhani, kheer, aloo matar etc.

 

Or visit a different ethnic restaurant, such as Mongolian, Ethiopian etc. and learn how they make their vegetarian dishes. I love Injera so am going to try making a vegan, gluten free Injera this upcoming week! http://chefinyou.com/2010/02/ethiopian-injera-re

 

Another thing is to make a list of different ethnic cuisine, paste it to the fridge and try making a different recipe or two (or three) every week. It can be easier stuff to make, too. Like, in England, try basing a breakfast off of what they sometimes eat...grilled mushrooms, kidney beans and toast, sliced tomatos, hard boiled eggs (if you eat eggs) and you can get vegetarian hot dogs.

 

Or go to a specialty shop and get sauces/ spices/ condiments from different areas around the globe. I personally love Vegemite, and add it to gluten free toast all the time (warning: most people who did not grow up in Australia do not seem to love it like I do). 🙂

 

Sometimes it's just as easy as changing a routine/ topping/ adding a new jam or new flavour.

 

Other ideas:

 

-get mint sauce. Eat it with roasted potatoes, spinach, asparagus etc.

-grey poupon mustard is my favourite mustard and adds a kick to a lot of dressings (I add a dollop to balsamic vinegar, shake well, add to my salads)

-try eating more nori/ seavegetables. I keep several tubs of miso soup around and make onion and tofu miso soup ALL the time for snacks. It is also higher in probiotics

One of my favorite lunches, that pack separately and put together at work, is to fill a large whole wheat tortilla with 1/4 hummus, some sriracha, banana pappers, and fresh lettuce, shredded carrots, and a chopped plum tomato.  Its 312 calories I think, and really satisfying.  I'll eat some sort of steamed veggie on the side.

I have been a vegetarian all my life, Actually none of my 1000 generations have ever had any thing other than Vegetarian.

I eat everyhting vegetarian.

After moving to US i realize how much of animal parts hidden in innocent food such as Ice-Creams Yogurt etc. I discovered a lot after a terrible allergy from some meat protein.

Over the decade I have become a Veg-guru!!

 

Look for Vegetarian cooking on You-tube, Vegetarian Resource group is a great source.

Established Yoga studios are great place to meat Veg. people.

Hare Rama Hare Krishna temples are pure vegetarian, they also have great books.

 

....and seek an Indian and make friends. We love to share our recipes and food. Nothing is more pious than helping one become Vegetarian to save our fellow beings!

I have posted a few recipes and ideas in the vegan-Vegetarian and gluten free thread. Please see if it is helpful..

I can provide you with more. Try one or two recipes. Stock your pantry with as many spices as you can safely store..

Stay close to your ethenic cusine as possible. As it takes time to develop a taste and understanding of spices, ingredients and pairing of them all.
