I'm looking for recipes that will incorporate avocado and/or black beans. I love them both but I'm getting tired of eating them the same old way over and over. Any ideas?
Best AnswerAs a college kid I find it hard to find time to cook during the week. So on Sundays I usually cook something I can eatover the course of the week (Also would work for families). This week I made a pasta bake with Penne, spinache, portabella mushrooms, ground turkey, roma tomato, canned pasta sauce, and cheese. It was so yummy!
I used a 8X8 dish (made about 4 servings). I have no idea the portions because I made it up as I went. But I would say for an 8X8 dish 1/2 a lb of turkey would be pleanty! I over did it and put the whole lb. in it.

Looooove them in a burrito with ground turkey or just mixed with lettuce and everything else you put in the burrito just no tortilla!

The sprouts didn't exactly work with the rest of the dish, but I had to get them out of the fridge before they went bad. For dessert, I had a little of the roasted marrow - mmm! ![]()

i like to mix my blackbeans with rice, yummy. have a piece of baked chicken or even spicy black bean burger with it. slowly changing my diet and trying different things.

Best AnswerCan of black beans, 1 cup (before cooking) of quinoa, cilantro, lime juice, grape tomatoes, green onions. Good stuff. Might have to try adding some avacodo to that myself. Season as you see fit. Great cold salad!

On lightly toasted Russian Rye or Sheepherder bread:
From the bottom to the top:
Spread on guacamole and/or basil pesto (I prefer both)
1-2 pan fried turkey or pork cutlets (depending on type of bread you're using)
1-2 slices of Muenster cheese (I heat the cutlets with the cheese seperately for a good melt)
3 strips of thick cut bacon
Spinich or kale
2-3 slices of tomato
spread on your choice of mustard (I prefer dijon for this) and/or mayo.
Your taste buds will thank you. If you were looking for something healthy, forget I said all that stuff above.

I do not. If I had to hazard a guess, I would say probably more than what a super health concious person would be willing to put into their bodies though.
Although I image it would be less damage if you skipped the basil pesto, mayo, and bacon.
Couple of things I forgot to mention:
1) If you use sheepherders bread, It' makes a rather large sandwhich.. Cut it half and eat it with soup, salad, etc. and save the other half for dinner or lunch the next day.
2) I prep the turkey or pork cutlets with a little kosher or sea salt, pepper and garam masala (can usually find in the spice aisle of a supermarket or make it on your own.)

I'm new to the community but your post caught my eye b/c I love avocado too! I eat a half of one every morning for breakfast with a veggie sausage, tomatoe & raw cheese & cayenne. I would imagine black beans would be another great addition to that so I'm gonna try it tomorrow! I also toss diced avocado into my vegetarian taco mix (black bean & corn base with whatever other veggies I have on hand) at the last minute ~ just to warm it up slightly. One of my favorites, although not with black beans, is avocado & red grapefruit salad with a lemon juice/dijon/olive oil/dill/garlic dressing. DELICIOUS!!!
Hope we get lots of other suggestions 😄
