it is possible when starting a run to press a side button instead of pressing the screen. It is easier to start runs by pressing the bottom right button (I think it used to be like that before at update last year). I personally think it is easier and can save seconds when doing a workout or run.

This option is still available, you could set the left button shortcut to take you to the exercise app. That being said, to change which feature activates when you hold the button, open the Settings
app on your watch and tap the Left Button option.
