All my saved data has disappeared for no apparent reason and now app does not have the ionic watch symbol ...

I would like you to make sure that you're logged into the correct account. I've seen some cases in the Community where there has been a typo in the email address and users create a new account and all of the data disappeared.
In this case, I would like you to log out from the account and log back in. If you're seeing on your Ionic fitbit.com/setup, this means that your watch isn't paired to your account anymore. However, if you're not getting this message then your watch is still paired.
