The only waterproof trackers are the Ionic and Flex 2. I assume that you have the Ionic, as you posted this in the Ionic forums, correct?
What I can suggest is getting some dried rice and letting the watch soak in that. The rice will attract the water and dry it out. We tried this with my sister's phone, which was dropped in a lake, and it worked perfectly.

I got my Ionic wet yesterday for the first time and it doesn’t work after getting out water. The only reason I purchased this was because it’s water resistant. Or at least thats what’s Fitbit advertised. I shouldn’t have
put this rice after it gets wet.

Oh great, first I lost notifications after the latest update, now I'm terrified to get this, thing that is supposed to be waterproof to 50M, wet. Just one more reason for me to be really upset about the amount of money I spent on this thing.

In fresh water, it should be fine. There's nothing in fresh water that would damage it. I tried mine out last week and you wouldn't even know it got wet.
I would be wary of trying it in salt water, as the salt can be corrosive.
