Since the firmware update my Samsung Galaxy A3 no longer syncs with the ionic tracker. Everything was happily working before the update. I notice the phone in question does not even appear on your list of acceptable devices yet it was working before the firmware update. Bluetooth connectivity keeps failing, why?

That's the problem, Piers, with using phones not on the approved list. They work sometimes and don't work sometimes and, in any case, with no assurances from FitBit.
You can try this Help article on syncing and see if you can fix the problem.

I meant to add earlier, Piers, that you can also sync with a Windows 10 computer if you have one. That's what I use.
