In Community > Friends, the number under each name is the 7-day total including so far today. So it gradually increases throughout the day, then suddenly drops at midnight as the oldest day is dropped and the new day's steps start adding in. When you tap on a name to see average steps per day, that does not include so far today, but the previous full days. So it stays constant throughout a day and changes only at midnight.
