After two years, the left button of my Ionic give in, but the rest of the watch is working fine.
After series of mistake, I stuck in a page asking me to "Add devices in settings". Without the left button, I cannot reset the watch. I thought I can just drain the battery and restart. But now I read that I also need the left button to turn on the devices.
Questions: How can I restart the watch without the left button?

I don't know of any way that can be done.

Thanks for your post and the details that were shared with me, unfortunately it's not possible to restart your Ionic device without the left button. Another way to restart your device is by going to Settings and then tap on restart, however, since your device is stuck, you'll not be able to do so. @tarajo4 Here is the link to Support. I hope you can get some help. I apologize if I'm misreading your post. It sounds like your Versa 2 button is stuck and/or not working. I searched a little bit. Things don't seem to end well when a Versa 2 button stops working.
