how do I make my Fitbit app stay open at all times

Regarding your concern, you can let the Fitbit app run in the background on your phone and when your phone is near your Fitbit device with Bluetooth turned on, it periodically syncs with the Fitbit app to update your stats and download available firmware updates. For more information about syncing your device, see How do Fitbit devices sync their data?
