You should be able to disable Fitbit pay (I assume that's what you meant in the title) remotely by following the steps here.

 

Open the Fitbit app on your phone - tap your profile picture - Ionic - Wallet - suspend the card from here.

This can also be done through fitbit.com through any browser.
