Does anyone know why my Fitbit Iconic stopped syncing and notifying me of text messages from my iPhone 6s?

A warm welcome to the Community @GRPattonSPHR! Since, your Ionic isn't syncing this might be as well the reason why it stopped receiving notifications. I would like you to try this procedure Why won't my Fitbit device sync?. 

 

If after this, you're still unable to receive notifications, try the steps mentioned on this article My Fitbit device isn't receiving notifications from my phone.

In addition to the steps Silvia mentioned, make sure you're staying logged in to the Fitbit app on your phone.  You don't get notifications if you log out of the app.
