Since the last Ionic update my device stopped locking when I remove from my wrist, therefore becoming a security risk as I have my wallet set-up.

I can confirm the issue. This is something going on even previous the last update. Once you use Fitbit pay the Ionic will remain unlocked even when you take it off from your wrist. A restart of the Ionic will help but only until the next payment., This is for sure something that the Fitbit engineers should look into it.

As @MassiP mentioned, I recommend performing a restart. This should help to refresh your Ionics system.
