My phone has Gmail installed as part of the standard bloatware, but I use another client (Aquamail). When I try to edit the email client only Gmail is shown.

 

Advice on how to select another client?

Probably because Aquamail is not a supported mail app, you can add it to notifications under the App notifications. This is where up to 100 apps may be selected to send their notifications to the tracker .
