Can I use Wallet at a shop if my phone isn't nearby, for instance if I left my phone in the car or at home?

Hello @Westfield6 , and welcome!  YES, you most certainly can.  The Fitbit Wallet is designed to be used as a solo device (just your Ionic), since the Ionic has an NFC chip installed within it.  Simply make your purchase via the stores NFC at checkout and you'll be done.  Just make sure the store you are visiting uses NFC during their checkout process!
