I've been reading a lot about Carb Cycling and would love to hear any and all feedback about your experiences.
I also have a question. Am I correct that there is never a time you eat a "Fat" and a "Carb" at the same time? So, never Peanut Butter on Whole Grain Toast?

That's more or less what Lyle McDonald says in his Guide to Flexible Dieting, in the chapter about what he calls "structured refeeds", which are "deliberate periods of high-carbohydrate overfeeding that may last anywhere from 5 hours (at the shortest) to one day": "the structured refeed should be high-carbohydrate (and ideally fairly low in fat) regardless of the type of diet you are currently following".
The reason for keeping fat intake low during that time: "a combination of a lot of carbohydrates and fat is a wonderful way to regain body fat during a structured refeed; if you’re going to jack up carbohydrates, you must cut back your dietary fat intake".
