I was wondering the same thing. Plus when I go into the sleep log it defaults to 30 day view and I while I can select "week" I cannot select "today"

And we're unable to easily toggle between normal and sensitive as well as see number of times awoken and length of time restless....all important info for insomniacs!! My Fitbit One is used mainly for sleep monitoring. It's useless to me now!

It's gone.
Read about it, and the reaction in the website dashboard forum:

I'm not a fan of the new format. I'm bad about remembering to put my fit bit into sleep mode and the new format is not very user friendly on manually entering information, unless you know exactly when you went to bed and got up. It doesn't toggle back and forth easily so you can see, oh that's bright pink, I must have gotten out of bed a few minutes early that day. Instead it's cumbersome and slow to load. It also has a programing flaw, it refuses any entry where start and stop time are both in the AM. This means anyone working late hours and getting to bed at 1 am and then up at 8 am, simply is refused the ability to manually log their sleep.

I'm so disappointed with the new sleep format. I use Fitbit One and their web dashboard to track my sleep. I don't like that they've dropped the hour indicators and sleep efficiency! If it this is how it'll be, I'll switch to a Garmin or some other product.

Greetings Fitbitters!
Thanks for joining us and for taking time out of your day to provide us with your feedback. Percentages aren't available in the update. Change might be a difficult transition at the beginning and I definitely understand where you are coming from. This implementation, however, has been monitored closely and most requests were ultimately implemented, and our team has received the rest as feedback for future consideration.
I have found a very interesting and informative post by @MatthewFitbit answering the most common inquiries about the new sleep graph.
I'd also like to request everyone to keep the conversation productive and on topic. This is to make the forums a safe environment. Thanks guys for your patience and help on this!
Let me know if you have other inquiries, I'll be around!

While I understand that changes are being made to make the online formats the same some of us purchased Fitbit for the sleep percentage capability and you have not addressed the desire to have that reinstated. Is this being investigated?

Looks like they went to the "Premium" option that you have to pay for.
