Does anyone have any advice regarding my charge 3 counting 30,000 steps in the space of 15 minutes while I was sitting down?! I've noticed it counting extra steps when I am winding my baby but it's normally only a couple of hundred steps, counting 30,000 in a 15 minute window today is new.

Welcome to the Fitbit Community @anne_monagle.
Thank you for the information provided.
If your wrist setting is set as non dominant please change it to dominant, this will decrease the sensitivity of step counting and should reduce any over counting of steps when your body is not moving. Your dominant hand is the one you use for writing and eating. You can find this option if you go to the online Dashboard at fitbit.com > click the gear icon in the upper right corner > Settings > Devices > Charge 3 > Wrist. Please make sure to sync your Tracker everytime you make any change to your Fitbit account.
In addition, you can perform a restart by following these steps.
If necessary, you can negate the extra steps by manually adding a driving activity as explained in this article.
Hope this helps.
