I would like to know why the tracker doesn't keep the correct time.

Hi @Fitformyage, welcome to our Fitbit Community! I'd like to follow up and help you with your Charge 3 since it doesn't keep the correct time. This may be caused by a syncing issue.
Please try the troubleshooting steps that are listed in this help article. After this, check out if the device you sync your tracker with has the correct time also. Finally, monitor your Charge 3 during the next 24 hours and see if it keeps the time correctly.
