Welcome on board @DinnyCull, it's nice to have a new member here! 😊
For certain Fitbit devices, if you stop moving during the run or bike exercises—such as at a traffic light—your exercise pauses automatically while you’re still (known as auto-pause). Your device vibrates to indicate that activity tracking paused.
To continue, resume your run or bike ride; your device vibrates again to indicate that activity tracking continued. For runs, if your watch doesn’t detect a run for 10 consecutive minutes, you’ll see a message asking if you want to end the exercise.
To turn off/on auto-pause:
I hope this answers your question! Let me know if there's anything else I may do to assist.

Would also be keen to know if auto pause is available for the bike option. When I swipe up on that exercise there’s no option, unlike for run where I can toggle on or off

Your instruction do not reflect what I have on my Fitbit device: there is no other options than GPS on or off when I swipe up on exercise app.
Please check your instructions.
