I've noticed that landings mess with my stair count...I guess by interrupting my upward motion for a couple of steps. is there any way to get around this?

How Floors how counted

Floors are counted using an altimeter. An altimeter is a sensor that calculates altitude based on atmospheric pressure and atmospheric pressure decreases with increasing elevation, so the it calculates elevation gain based on the reduction in atmospheric pressure. Your trackers register a floor when they detect continuous motion combined with an elevation gain of about 10 feet. Given the fact that 10 feet is an average between residential and commercial floor heights, although commercial floors in particular tend to be higher than residential floors.

It will add floors when it is windy or cold.

I can only Assume you are stopping on the landing. Stop it does not get counted

Thank you for your reply. I have done some reading and understand generally
how it works, and that's why I'm curious why it's not counting the floors.
I'm going up at least 8 flights (in commercial buildings), 4 times a day,
so that should be minimum 32 flights in just those buildings, but today it
only registered 23. I mean, it's not a huge deal, I know I did them, but
it's nice to see it in my stats lol

Your Fitbit requires the 10 feet to be done within a certain time period, but Fitbit has not said what the Max time is. Landings should not affect this.

Is the floors at least 10 feet between floors?
