Reading EOV Data

I downloaded my Charge 3 data in an attempt to understand the EOV graphs visible within the application. For example, on 1/11/2021 12:12:22 AM I had a reading of -69 within the "Infrared to Red Signal Ratio" column. How does relate to the visual graph? What does this number mean? Do higher numbers reflect 'high' oxygen variation, where a lower number would indicate low variation?
