When I do the Relax Breathing, when I finish I see "Alignment low" or "Alignment medium".  What exactly does it mean?

It just means how closely you followed the breathing prompts. There's a useful guide to the Relax feature at: https://help.fitbit.com/articles/en_US/Help_article/2077/
