I work a lot with my hands, so I did some research on phantom steps. I saw that if you put the fitbit on your non-dominant hand, but say it is on your dominant hand, it should stop the problem. However, I will still end up with 1,000+ steps while I'm sitting and doing my job. Recently, it even auto-recognized 15 minutes of swimming activity while I was working. Besides taking the fitbit off, is there a solution to this?

You could try putting it in a pocket, or better yet, get the clip designed for the Inspire.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.

The problem with taking it off or using the clip is I use the notification aspect of it a lot. I work as quality control, and can't use my phone at work. So the notification lets me know if a text is my supervisor or if it can be ignored.
