I took a strenuous five mile hike up a rather steep climb and nothing registered on my dashboard. I was using poles and I wonder if that skewed the data. It did, however, count the steps.
I then later manually added the activity to my computer site so that I could see my heart rate. But still my daily exercise minutes showed 0.
But it will track a slow ten minute walk to the store.
What the ?

Your device detects activities based on the motion on your arm. The automatic detection is a feature called SmartTrack. For example when using the elliptical machine make sure you have the moving bars so your device detects the motion and record the activity itself, once an Elliptical activity is saved on your account it should show on the Recent Exercise area. If your heart rate is high but there isn't much motion (yoga, weight lifting, etc.) then these activities will be difficult to be detected by your device. Still you can manually log your activity so you have a record on your account or use the activity mode on the device itself.

The hike never did show any activity nor exercise minutes on my phone
Fitbit dashboard.
And it was a strenuous hike; I was hiking with someone more fit than I and
I was huffing and puffing to keep up with her, and I couldn't believe that
my fitbit didn't count it.
When I logged onto my computer and logged the activity there at least I
could see what my heart rate was doing during the time I was hiking.
Why do the dashboards on my phone and computer provide slightly different
information?

Hiking usually does not have a consistant arm motion like a simple walk would. That is why their is no auto detect for hike.
If you have a phone you can use the hike option in mobile track.
