Gave my daughter an Inspire but she has an old iphone (4s), which we put an older version of the fitbit app on. The app keeps crashing when she tries to open it though, so I told her to not worry about looking at stats on that, since her daily stats show on her Inspire. Just curious how long the Inspire will hold her data for between syncs if she isn't syncing it often.

It's a simple question, but not a simple answer. Fitbit say:

So, syncing every few days is fine but once you get beyond a week things start to get a bit strange.

To sync you first need to setup your fitbit. This links the fitbit to your account and does an initial sync. Thereafter whenever you open the app it will sync and you can manually sync from within the app.
There's a guide to doing the setup here: Help article: How do I set up my tracker?
