My inspire hr is brand new but I previously had a Garmin vivosmart hr. In my Garmin, I could tell it when it should begin exercise mode which was very helpful because one of the exercises I do the most is hot yoga, which is unlikely to be picked up on movement sensors. The Garmin would calculate calories burned based on heart rate, but I had to tell it when I started and when I stopped.. Can I do this on the inspire hr?

Certainly. Use the Exercise app to tell it when to start and stop the workout, and to tell it what you are doing. I find it much more reliable than relying on auto-recognizing exercise.
This help section tells all about it:
How do I track my workouts with my Fitbit device?
