I am clearing user data from my fitbit and it goes to 0 but as soon as I resync my fitbit to my phone, the numbers jump back to what they usually were. What should I do?

What are you trying to accomplish?
Clearing user data clears the tracker only, as for giving it to someone else.
Your own stats are stored in the fitbit database under your fitbit account/email. As soon as you sync your fitbit, the data gets loaded back.

I just received my fitbit today and when i synced it, it already came with 1,500 calories. I wanted to see if there was a way to change this so that I can start working out today to see how many calories i burnt off.

At least part of that are your BMR (basal metabolic rate) calories that you are always burning just by being alive. As soon as you created your account, Fitbit would credit those BMR calories for today since starting at midnight. And they get credited even when you are not wearing the tracker. Everything should reset at midnight; then you can start fresh with a new day.

The body burns calories throughout the day even without exercise. It is roughly a linear relationship starting at midnight from 0-calories. The calories normally burned and those that it measures that come from exercise are added together and reported by the fitbit.
