If I were to upgrade to another device, I know I would connect with my bluetooth, would all of my previous data from the other device transfer over?

No problem.  Once you do a sync, all your data goes to the fitbit database, stored by your account/email.  Just use the same account when you set up new device and all your data is still there and continues getting recorded to same account.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
