Do I need to remove my Android as a device, how do do that, and will I lose anything that was stored through that device?

Once you have synced, your data is stored on the Fitbit servers under your Fitbit account/email, so no data is lost.
First, if possible make sure you have completed a recent sync from Android to make sure all data gets to Fitbit database.
Make sure you remember the Fitbit account/email and password you have been using. On Android app, tap profile pic at top left to get to 'Account' page, then tap your tracker. On tracker page, tap the trashcan icon at top right to remove tracker from that phone.
This step probably not necessary, but to be safe, go to bluetooth settings on Android and make sure tracker is not still paired with phone. If so, unpair it.
Then on iPhone, download Fitbit app and log in to same Fitbit account/email as you have been using. If you are in same account, all data will be there. Then from 'Account' page (via tapping profile pic on main page), do 'Set up a Device' and add your tracker there.
I think I made that look more complicated than it actually is. And you could do the iPhone step first before removing from Android, so temporarily it would be tied to both phones. The possible issue with that is it might have trouble syncing if both phones nearby.
But the key is to make sure you use same Fitbit account on both phones, and the data will join seamlessly.

No no no, you do not want to remove the tracker from the Fitbit app or your Fitbit account @MelissaBurk .
We do not setup a Fitbit tracker to a phone, we setup a tracker to our fitbit account, then the app will connect the tracker to the phone.
If the android phone is around and turned on, yes it is important to remove the tracker from the android's bluetooth.
If the android phone is not around or doesnt turn on dont worry about it.
Let's install the Fitbit app on your ios phone, log into your Fitbit account.
You will be asked to grant several permissions and the tracker will sync.
Now we have to setup notifications.
