Checking in the help section and googling how to set up quick responses, I’m reading that iPhone is acceptable. However I’ve read some forums which say otherwise? I’m unsure why Fitbit would state on their website that iPhone is accepted but it isn’t? Can someone please clear this up for me?

It depends on the version of iPhone - they are not all supported by fitbit. The list of supported phones can be found at www.fitbit.com/devices

I suspect https://help.fitbit.com/articles/en_US/Help_article/2344 is what you want to look at. My understanding is that the way that iOS works means that on Android you can send quick replies to notifications from a selection of messaging applications but on iOS you can only send quick replies to messages sent via the Fitbit app itself. (This was the same on the Pebble; it's sometimes mentioned that the Pebble could do this but in actual fact it had to develop a service in conjunction with some mobile carriers to do it rather than go via iOS itself so it was never universally available)

"Use quick replies to send customized responses to text messages and messages from certain messaging apps with your Fitbit Charge 3, Fitbit Ionic, or Fitbit Versa. This feature is currently available on devices paired to an Android phone (7.0+). Devices paired to an iPhone or Windows 10 phone can respond to Fitbit app notifications, such as messages, cheers, taunts, and friend requests."
