I recently purchased a standing desk and a balance board. It's better then sitting and my muscles are working but I'm not getting any steps in. I see Amazon sells several different steppers or elipticals I could use at my standing desk. Does anyone have any experiences incorporating these into your work day? Does your fitness tracker give you credit for the steps taken? Is it difficult to walk & work?

You Fitbit uses mainly arm swing movement to calculate steps. Thinks like pushing a grocery cart, using a treadmill or elliptical while arm is holding onto the rails will produce inaccurate results.

Welcome to the community!
@GreginJaxFLis correct in that most Fitbit trackers (including the Versa) are wrist based and any steps that you take while keeping your wrists still will not be counted.
That said, I have a desk treadmill and may suggest a few alternatives:
My suggestion? Get a Zip and leave it next to your desk, put it on when you get on your balance board. Sync both trackers both before and after you set your desk to standing mode.
I hope this helps.
