I currently see 7 exercise modes on my Versa when I go to 'Exercise'. However, I see online there are up to 15 exercise modes for Fitbit Versa. How do I get the additional modes to show up on my Versa?

Delete one since seven is all you can have active.  Then click + at the bottom of the screen and you will get complete list from which you can choose.

I just would like to confirm that you can chose only 7 exercises from over 15 exercises types. If you want more details I recommend you to check this article How do I work out with the Exercise app on my Fitbit device?
