I have read a couple of articles that say a constant fat burn is hard to maintain so it is said to use the fat burn as a bridge to cardio as it will burn a higher percentage of fat on a smaller amount of time.
So I work in hospitality and our floor space is almost a building and a half. We have the capacity for nearly 80 people and then there is a retail space, I am constantly making coffee and running them. In my 9 hours of work I can easily complete my 10000 steps.
According to my fitbit when working I am in constant fat burn. It will average from 2hrs to 5 hrs of fat burn, but we are not even back into busy season yet. Is this still a valid way to stay on top of weight loss so long as other days I am doing HIIT trainings.. I also like jumping on our tramp for about 30mins at the end of the day which usually sends my heart into cardio.

Sound valid to me, especially since you're getting extra cardio in to help with heart health. Cardio burns more calories overall, but fat burn zone burns more fat proportionately. Getting some of both is a good way to stay on top of things. Keeping your calorie intake below what you're burning is important also.
