How do I reset steps?

If you want to reset everything, the only way is to create a new account.

If you want to reset only steps, it cannot be done, and I can't imagine what sense it would make, whether you were resetting for the day or for life.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
