After purchasing the versa 2, I would have liked to continue to use my charge 3 alongside the versa 2 for activities that the charge three is more comfortable for. Is there anyway of adding the charge three back onto my account as an additional device?

No, I'm afraid not. Although Fitbit supports multiple trackers connected to an account, there are restrictions. One of those is that you can't have a Charge 3 and a Versa 2 connected at the same time. There's more information on the restrictions at https://help.fitbit.com/articles/en_US/Help_article/1715/

Thank you for the clarity @SteveH ! Just a shame to not be able to use it still is all! Is there likely to be a change to these restrictions in the future? Out of curiosity?

I believe that Fitbit have said that they'd like to overcome the problem and remove these restrictions.....but they have been saying that for a while now and I doubt anything is going to change soon.
