I know that the versa can have 300+songs downloaded on the watch. Does this include itunes playlist? Podcasts? Are there only certain file types that are supported?

You can use Deezer or Pandora (you need an account with them) or you can sync your own playlists from iTunes or windows media. You cant get podcasts.

How do u play music on the Versa?

I converted my mp4s to mp3s (I do this anyway so I can transfer my songs to non-apple things!), created a versa playlist limiting to just mp3 and 300 of my favorite tunes, then transferred. Took awhile, but no problem!

I'm trying to figure out how to put Apple Music on my Fitbit versa? I'm not real tech savy so I need all the detailed instruction I can get. Help 😊 Appreciated

Just like Nancy, I convert them to MP3 and sync to my Versa. I think there's no way Apple Music would be brought in Fitbit but I have the Apple Music Membership and I probably will keep using it. So the only thing I can do is to use an apple music converter. For the detailed instruction, you can check this.
