Rib pork chop

What does Slo and Slf mean.  It is written next to some of the rib pork chops. Some have one and some have the other.

"SLF" stands for "Seperable Lean and Fat " - this is the original portion of meat, with all fat included.

 

Whereas "SLO" stands for "Separable Lean Only" - this is meat with visible fat removed. Fat will still remain inside of the meat.
