Like many others my GPS tracking stopped working after the October-ish update(s). I fiddled with some settings on my phone (Galaxy S10 Android version 10) this evening and seemed to have gotten it working again (for now).
Settings > Location > Bluetooth scanning (make sure this is enabled)
Settings > Location > Fitbit > > Mobile Data
* Turn these off then back on *
Allow background data usage
Allow app while Data saver on

Not an Android dude, but am an IT Guy, as well.
Good troubleshooting and reporting. All points made would seem to apply.
