I purchased a new fitbit, registered it with my email and password. The old HR Fitbit was on the phone and so I deleted the Fitbit app and reinstalled it. When I went to set up the versa 2 it said already registered with my email and password. So what do I do?

Deleting the app does not unattach a tracker. I expect you have both now attached.
To get rid of old tracker, from phone app 'Today' page, click your profile pic near top left to get to Account page. If both trackers are listed on Account page, click the one you want to get rid of (old HR). On page for that tracker, click the wastebasket icon near top right. Then go to phone's bluetooth settings to see if that old tracker is still paired. If so, unpair it. That gets rid of the old one. It sounds like you will find the new one is already set up.
