Why are my sleep stages different?
Sometimes they are detailed and sometimes they are basic. Why?

Hello @Lscherf and a warm welcome. Your image didn't come through. I am going to guess that it shows sleep patterns instead of sleep stages, If this is the case, I think the attached information will help.
I hope this answers your question.

Hi @Lscherf , in order to accurately monitor your sleep, e.g. showing your sleep stages, the Versa needs a least 3-4 hours of continuous monitoring your sleep and resting heart rate. If for whatever reason this period is not detected, you will only get the basics. See also this help article. Regards kuzibri

Yes this does help. I didn't know it wasn't good to do the Begin Sleep Now. I'll stop doing that.
I have one more question. How do I prevent my watch from lighting up when I move at night? It's so bright.

@Lscherf You can put your Versa 2 into Sleep Mode in the Quick Settings by swiping down on the watch face > tapping on the control center > tap on the moon to put it in sleep mode. Push the button until you get back to the clock face. You can push the button to see the time when you are in sleep mode. The good part is that the watch face brightness is set to dim when you are in Sleep Mode. Repeat the steps to manually turn it off. A quick way to do this if you have an irregular schedule.
If you have a regular schedule, you can set a Sleep Mode schedule. Swipe to the left until you get to the settings (gear) on your Versa 2. Scroll down to Sleep Mode. If you tap the Schedule to ON, the Customize box can be tapped and you can set your schedule.
I hope this helps!
