I’m a server at a restaurant with no stairs. When I work, at times, my Fitbit will say I’ve climbed x amount of stairs, which I had not, yet when I’m at the gym on the stair climber, not a single floor is calculated. Why when I’m actually climbing stairs does nothing register yet when I’m physically climbing stairs I get nothing?

I can explain the stair climber problem.
Your fitbit tracks floors by detecting changes in air pressure (the air pressure drops as you gain height). It gives a floor when it detects a rise in height of around 10 feet but as you don't actually gain any height when on a stair machine you don't get any floors.
What is more confusing is why you are getting floors at work. If you are not walking upstairs are there any slopes that you walk up - it doesn't have to be on stairs?
Because the detection works on changes in air pressure then the occasional can be tracked due to changes in weather or in windy conditions but this should be quite rare.
