The trick here is to not pair in phone Bluetooth settings but rather let the Fitbit mobile app do that.
Same here. I've never had an issue with my versa. And just like you, after the update it just will NOT sync. I already tried deleting and reinstalling the app. Restarting the versa itself, turning Bluetooth on and off. Removing device from Fitbit app and then adding it on again, nothing works!! This sucks!!
I’ve never had issues before this last update. I am synced to the app but the information is randomly different from watch to phone. The steps were matching, but it didn’t track my sleep, active hours or hourly steps. I restarted both and tried all the troubleshooting suggestions. That seemed to help, although it was saying in the app that I missed an hour from the hourly steps and my watch was saying I got them all. Then at midnight it lowered my steps for some reason and after busting my bum to hit 25K steps (I even got the badge!) but now it says I only walked 24,449. And I was first in my challenge group, and then it dropped me back down to 2nd place after all that! So frustrating!!

@Maricrisale5 What phone model and OS do you have? Did you try unpairing from Bluetooth combined with reinstall of the app and reboot of the tracker and the phone?
