I looked it up on YouTube and they said

you have to reset your factory settings.

I haven't found a way, as @jadelia94 mentions other than a factory reset.

However @jadelia94 you can set the pin for Fitbit pay only. This way it is only when using fitbit pay that a user will be prompted to enter the pin.
