No matter what I do, my Versa 2 keeps saying it's switching clock faces and then informs me it's still installing... if I go out and in it will tell me that some items didn't finish. Doesn't matter for Fitbit faces or custom ones in paid for. Is there any fix for this?

I have had this same issue. I had to force close the app and clear the cache. (Pixel 3 XL). Then when I went back in it asked if I wanted to keep trying to install, I chose later. Then I was able to switch to a different watch face choice (I chose the default face and it switched just fine). Afterwards I remembered that you can change the watch faces directly on the Versa 2. So I tried that and the watch faces switch with no problem. I am hoping this is simple a software glitch that Fitbit can remedy with a patch.
