Probably best to restart both watch and phone.
If this is a new occurrence and still remains persistent it could be a common issue possibly related to to a recent Fitbit update for iPhone.
In which case its probably best to inform Fitbit Support directly. They may be able to help you.

Welcome to the Fitbit Community, @esquirekgm. It's nice to see you around and thank you for your help, @Guy_.
@esquirekgm Thanks for the details shared in your post. I recommend changing your sleep setting to sensitive to see the results. For steps to change the setting, see What's the difference between the normal and sensitive sleep setting?
For more information about tracking sleep, see How do I track my sleep with my Fitbit device?
Hope this helps!
