On the fitbit website it says "skin temperature variation and SpO2 are available with Ionic, Versa family and Sense devices only." Does the versa 2 actually have the ability to track temperature or not?

Yes, my understanding is that the Versa 2 does actually have a temperature sensor, but it has been utilized until now.
Note this is only skin temperature and has way to measure internal temperature.

Ah right , it’s just that under the metrics it doesn’t seem to record skin temperature but records everything else like HRV etc , any idea why? Everything is updated as it should be

Yeah same, it’s annoying because it’s quite a interesting metric in my opinion, maybe they’ll release an update or something

I thought mine didn't record it (as it gave 0.0 degrees yesterday), but today it says my skin temperature was 0.6 degrees higher last night.
It still doesn't give me an actual temperature, but if it can't measure it, why does it conclude it increased 0.6 degrees?

In the mean time I found out that it's actually meant to work like that. It doesn't give an actual temperature, just deviations from your baseline.
And according to Fitbit, that baseline is decided on after a couple of nights of measuring.

Scroll to halfway the page, under the heading "Uncover your skin temperature variations", where you can see the image that clearly shows it's all about the variations, not the absolute temperature.
