My last sync was at 4:32 pm yesterday and since then hasn't synced. I have tried to sync it and it wont go, I have turned Blue tooth off and on, restarted my versa...its reading my calories and water intake from MFP but steps are gone...what is going on?

So @ChrissyLu if I understand your post, your Fitbit is not syncing, your title send to be inaccurate.
May I ask what type of phone your having problems with?

I have a Samsung S7 - my versa worked just fine for the past 8 months now it stopped syncing yesterday, when I try to sync it doesn't but it is reading my calorie and water intake from the My Fitness Pal app, but my steps are not being counted on anything but the watch. it is not syncing to the app whatsoever

As for calories your account is probably only calculating the BMR.
As for water, this could have been entered on the tracker, and would have been sent at the time the water was entered, not during a sync.
Since you are on Android it can help.
Have you restarted both the phone and the Versa?
Shutdown the Phone then restarted?
Let's swipe down the notifications bar and hold the finger on the Bluetooth icon for a couple of seconds.
Now remove the Versa from the menu.
If the tracker still isn't syncing then Let's go into your phones settings - Apps - Fitbit - Storage - Clear Cache
Now try another sync

Calories and water are showing up because of MyFitnessPal. Everything I log shows on my FitBit app.
I have turned bluetooth on/off. I have taken versa out, re-paires. Shutdown the fitbit and my phone. Everything is up to date. Forces stop in settings restarted and no steps are being added to my app

Also on my app it says last time it synced was 11/23 at 4;32 PM. It will not sync

You say that you took the Versa out and repair, what exactly do you mean?
The correct way is to tell the phones Bluetooth to remove false r forget the Versa. Once this has been done, the user is unable to repair the correct thing is to open the Fitbit app and force a sync. If you where able to repair then please remove it so that the app will be able to do what it is suppose to do.
If you removed the firbit from the app, this is not unpairing but telling Fitbit that your not going to use the tracker anymore, the tracker will need to be setup again.
Did you restart the Versa? Restart the phone needs? Or do a shutdown of the phone needs?
Since you have an Android phone please clear the cache of the fitbit's app.
