You never need your phone with you. The tracker will store data internally, then sync the data to your phone and the Fitbit database in the cloud when you get near your phone. The one thing you phone can be helpful for on walks/runs is GPS. The Versa 2 does not have GPS but can connect to your phone's GPS (connected-GPS) to use phone's GPS for distance and mapping, but this is not required.
I don't want to comment on swimming as I haven't used that, but same principle that data is stored on tracker until near phone to sync to it.
Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
